Grapefruit & Fennel Quinoa Salad

Ingredients


  1. 1 large grapefruit

  2. 1 cup cooked quinoa

  3. 1/4 cup diced cucumber

  4. 1/4 cup chopped fresh mint

  5. 1/4 cup feta cheese, crumbled

  6. 2 tablespoons olive oil
